How our sake is made

Sake is made from rice water and yeast. It is a fermented alcoholic beverage, as are beer and wine. It is not made through distillation like whisky, gin or vodka, so it is not a spirit.

We use Japonica rice varieties that are grown in Japan specifically for sake brewing. Collectively, this rice is called sakamai, or sake rice. It is purpose grown and is only available to registered
sake breweries.
